Recipe: Zucchini Slice
If you're looking for a quick and easy mid week dinner, look no further! Added bonus, there's always leftover which taste just as good served cold the next day in the kids lunch box. This is a family favourite in our house. It's gluten free, low carb & high in protein. It's also super versatile; you can add in grated carrot, sweet potato, leek, capsicum, feta, fresh herbs, anything goes!
2 large zucchinis, grated
8 eggs, whisked
1 large onion, diced
5 slices of short cut bacon, diced
1/4 cup EVOO
3/4 cup sorghum flour (could use any flour)
1/2 cup grated cheese
Preheat oven to 170 degrees (fan forced)
Spray baking dish with EVOO
In a large bowl whisk eggs. Add EVOO, grated zucchini, diced onion, diced bacon and combine. Stir through sorghum flour.
Pour into prepared baking tray. Sprinkle with cheese.
Cook for 45 mins.
And that's it! Dinner (and lunch for the next day) is done!! Serve with a fresh garden salad for freshness and extra serves of veggies.
